RAFA Rides hazelnut shortbread recipe

There’s nothing better than putting your feet up at the end of a long cycle ride with a cuppa and a biscuit.

BBC One Saturday Kitchen presenter (and RAFA Rides participant) Matt Tebbutt has the perfect recipe for those taking part in RAFA Rides in Rutland this weekend.

These tasty treats could even be squirreled away in your saddle bag to provide a quick energy boost while out on your bike.

Hazelnut shortbread biscuits

Ingredients

300g shelled hazelnuts

300g butter

250g soft brown sugar

350g plain flour

Method

  1. Preheat the oven to 180°C.
  2. Toast the hazelnuts, then blitz in a food processor into a coarse crumb. Tip out and set aside.
  3. In the same processor, blitz the butter and sugar together. Add the flour and hazelnuts and briefly blitz again.
  4. Tip the mixture out and shape with two spoons into quenelles. or however you wish.
  5. Put onto a baking tray and bake at 180°C for 10-15 minutes.
  6. Allow to cool, dust with icing sugar and serve.
